Emanuel Ashiedu is introducing Kansas to the vibrant taste of Louisiana with the launch of two new Sam’s Southern Eatery locations in Salina and Hutchinson. Since its founding in 2008, Sam’s Southern Eatery has spread to over a dozen states, drawing a loyal fanbase for its distinct Southern flavors. Ashiedu, a Salina-based software engineer, discovered Sam’s through family, sparking his own interest in expanding the franchise to Kansas. With his brother-in-law’s encouragement, one bite of Sam’s signature seafood and batter was all it took to inspire Ashiedu. Now, he’s dedicated to making Sam’s a Kansas staple.

A Unique Dining Experience in Salina and Hutchinson

Opening on March 20 at 122 W. Crawford St. in Salina, Sam’s Southern Eatery has been warmly welcomed by locals. Hutchinson’s branch, under Ashiedu’s management since last summer, also reflects his dedication to quality and flavor. “The food is amazing,” Ashiedu says, emphasizing the unique cornmeal and spice batter that has quickly gained fans in the community.

Ashiedu’s commitment to fresh, high-quality food has resonated with locals, who appreciate the clean, flavorful dishes. “We clean the fryers every day so it’s not greasy,” explains Mahmoud Bayatena, manager of the Hutchinson location, ensuring every dish delivers the best Southern taste. Repeat customers come for menu staples like fried green tomatoes, crab, and oysters, all offered with Sam’s distinctive quality and warmth.

Regulars like Daryl Adams, a Hutchinson customer, praise both the flavor and value. “The portions are so large we often split it,” Adams shares, highlighting Sam’s approachability and affordability—two key elements that make it a favorite among Kansas diners.

Plans for Expansion Across Kansas

With strong local support in both Hutchinson and Salina, Ashiedu is optimistic about expanding Sam’s Southern Eatery further in Kansas. Encouraged by the positive reception, he is actively considering new locations across the state. “We want to share our food and culture with more of Kansas,” he says, expressing excitement about future growth.
